The Park’s Christmas cookies with a twist

Christmas baking is the best kind of baking, and our fantastic chef, Dave, is sharing a little Christmas cheer by letting you into Eastwood Park’s secret Christmas cookie recipe! So, if you’re on the search for a simple recipe for delicious Christmas cookies to share with loved ones (or eat to yourself, we’re not judging!), we’ve got you covered.

It’s time to bring the festive feeling into your kitchen… ready, steady, bake!

Ingredients                                       

  • 1 lb of butter
  • 1.5lb of plain flour
  • 8 oz of sugar
  • 4 oz Christmas pudding
  • 2 tbsp. of water

Method

Step 1: Preheat your oven to 180 degrees and line a large baking tray with greaseproof paper

Step 2: Cream the butter and sugar together

Step 3: Blitz the Christmas pudding and add to the butter and sugar

Step 4: Add in the flour and mix to combine

Step 5: Add water to form a stiff dough

Step 6: Roll out the dough to around half the thickness of your festive cookie cutters and cut as many cookies as you can from the dough

Step 7: Place cookies onto the tray and bake in pre-heated oven for around 12 minutes, or until golden brown

Step 8: Leave to cool on a wire rack and serve with sprinkled icing sugar and cinnamon

Enjoy with hot choc or a glass of mulled wine. Deeeelicious!
